mini corn dogs
who can resist a yummy corn dog? to be honest, i don't remember the last time i even ate a corn dog. but i do like them. and i like them even more when they're in the shape of tiny muffins!
while planning my son's second birthday party, i came across this recipe on pinterest. it looked like a fun "kid food", so i went for it! even more bravely, i didn't attempt the recipe til the day of the party! thankfully, they were a hit, and there were none left! always a good sign at a party!
i made them again for lunch today-- while cooking the second batch, i realized that i left out the sugar, ha! so i threw a little in (not the full amount) and you could hardly tell that it was missing! i also didn't have a full stick of butter, so i did the half butter/half applesauce version and they were delicious! plus, i ran out of hot dogs (i need to go to the grocery store, if you haven't noticed), so i threw in some leftover cooked sausage that i had after making pizza the other night. the sausage muffins were yummy! we have some leftovers, which i plan for us to eat for a quick "before church" breakfast in the morning. lunch, snack, breakfast, party...these muffins are great anytime!
ingredients:
1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 teaspoon salt
8-10 all-beef hot dogs, cut into 1″ bites (i used Hebrew Nationals)
what to do:
1. Preheat oven to 375 degrees. Combine butter and sugar in a bowl, and whisk to combine. Add eggs and whisk to incorporate. Add buttermilk and whisk to incorporate.
2. In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine. Whisk into wet ingredients in two batches.
3. Spray a mini muffin tin with non-stick spray, and spoon 1 Tablespoon of batter into each mini muffin cup. Place one hot dog bite into the middle of each cup.
4. Bake for 8-12 minutes (oven temperatures vary), or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator, and re-heat for 20-30 seconds before serving.
