delicious waffles
I love the 100 days of real food website! I have found numerous great recipes (quiche, muffins, banana pancakes, chicken noodle soup, homemade jam, etc.) that have become staples in our home. all without processed ingredients or refined sugar. can't beat that with a wisk!
here is the whole-wheat waffle recipe:
2 large eggs
1 ¾ cups milk
¼ cup oil (I have used vegetable/canola and coconut oil)
1 tablespoon honey
½ teaspoon ground cinnamon
¼ teaspoon baking soda
1 ½ cups whole-wheat flour
2 teaspoons baking powder
⅛ teaspoon salt
100% pure maple syrup for serving
here is the whole-wheat waffle recipe:
- Preheat your waffle iron.
- In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
- Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
- When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked.
- Top with pure maple syrup. Enjoy!
I make this recipe and we eat them for breakfast, then I individually wrap each leftover (cooled) waffle in wax paper and put in a container and place in the freezer. then my husband has single-servings of homemade waffles to eat for breakfast throughout the week!
one of our favorite things to do with this recipe is spread natural peanut butter on a warm waffle, slice a banana, then drizzle honey over the top. peanut butter and bananas are a match made in heaven anyway, and when you add the honey, it is major delicious! not to mention a protein-filled breakfast to start the day!
now that it's summertime and all the fresh berries are in season, i'm looking forward to trying this recipe with some different toppings!
