pumpkin blondies
are you pumpkin'd out yet?
tis the season for pumpkin spice lattes, pumpkin rolls, pumpkin bread, etc...
how about some pumpkin blondies? i came across this recipe in a baking magizine last fall and it is delicious!
{pumpkin blondies}

2 cups all-purpose flour (i use whole-wheat)
1 tsp baking powder
1 tsp baking soda
1 tsp salt (i cut this down to 1/2 tsp)
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp groung cloves
1/2 cup butter, softened
1 1/2 cups packed brown sugar
1 egg
1 tsp vanilla
1 cup canned pumpkin
1 cup white baking chips
1/2 cup coconut
{1} preheat oven to 350 degrees. grease a 9x9x2-inch baking pan. in a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; set aside.
{2} in a large mixing bowl, beat butter and brown sugar with an electric mixer until light and fluffy. beat in egg and vanilla until combined. add pumpkin; beat on low speed until combined. beat or stir in flour mixture. stir in baking chips and coconut. spread batter into prepared pan.
{3} bake for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean. cool in pan on a wire rack. makes 12 bars.
