it's a wrap

if you're like me, cereal just doesn't cut it for breakfast most days. as an active mom of a busy 15-month-old as well as current incubator for baby #2, i need fuel in the mornings!



in addition to cutting out some extra sugar (i say some... i fail miserably every time i attempt this challenge), i am also trying to get plenty of protein in the meals and snacks i choose.



here are two delicious wrap ideas that are full of protein, nutrition, and flavor!



wrap #1: no-name wrap, let's call it the mexican wrap




i didn't invent this wrap, but it has become a favorite. i've heard it's good with chorizo, but i have yet to try it!

ingredients:

1 whole wheat tortilla

1 egg, scrambled

2 spoonfuls salsa

2-3 slices avacado

2 spoonfuls grated cheese



pretty straightforward-- scramble the egg. i put the cheese in the tortilla first, then the egg, then the salsa and avacado. wrap it up! great for any meal or a hearty snack!



wrap #2: JMU wrap



definitely can't take credit for this wrap. i was introduced to it by my husband and sister-in-law.



ingredients:

1 whole wheat tortilla

2 tablespoons peanut butter

1/2-1 banana, sliced

handful of granola or cereal (cheerios work fine)

drizzle of honey (optional)



again, very straightforward. i like to spread the peanut butter on the tortilla, heat the tortilla in the microwave for about 20 seconds, then slice the banana and sprinkle the cereal (i don't like a warm banana). goes great with a large glass of milk!



for the record, i don't really measure when i cook, unless it is a specific or new recipe. my husband's family calls it the TLAR method (That Looks About Right)...and i call it cooking! it's fun to throw in what looks like the right amount then taste and adapt to your own preferences!
